Latin plant names have often caused confusion. The almond, however, dupes us in a particularly perfidious way: its botanical name is Prunus dulcis - meaning "sweet plum.” Honestly! Apart from the fact that its core is sweet and the ripe fruit has at least the outer shape of a plum, there is practically no similarity between plums and almonds. That’s like comparing apples and oranges! It's almost as incomprehensible as the fact that the Amaretto liqueur, which we have folded delicately into the filling of this truffle praline with tender milk chocolate, has actually been made from bitter almonds! It doesn’t taste bitter to us ...
